This Indian Single Origin is a natural processed coffee with a twist. The coffee cherries at a specific Brix level were placed into stainless steel fermenters. The tanks were then purged with carbon dioxide gas and the coffee was fermented for 86 hours - Carbonic Maceration. After removing the coffee from this process, the cherries were directly put on raised beds for slow drying; a process that with constant stirring, continues over the course of 29 days. These very limited beans are definitely not one to miss out on trying whilst they are available. Once they are gone, they are gone...

We love a brew that screams romance and has its own story. The Ratnagiri Estate (which translates to Pearl mountain because of the dense Oak that tops the land) was established in 1920 and is now run by Ashok Patre, the namesake of these black label beans. This was passed down to him by his father, and before that was established by his grandfather. The farm is an organic, biodynamic and experimental paradise - one that maintains official Rainforest alliance certification too. This I can assure you is more than just a label for the producers at Ratnagiri, as coffee whilst being shaded by 3 levels, shares the land with over 48 recorded bird populations, monkeys, leopards, wild boar, tigers, mongoose and, on occasion, elephants!
