It is no surprise that the highest altitudes in the State of Bahia in Brazil, produce some of the best quality coffee. Now in this specific location, the drying process for these beans is made challenging to say the least due to the intense humidity and rainfall that occurs around the harvesting season. Therefore cherries are transported by many, 50km to the nearby Caatinga Biome for a more appropriate climate for drying.
It is along this journey that as Bob Ross says, a 'happy accident' occurs... The coffee cherries, stored together in a sealed truck, undergo a unique fermentation process en-route, which lasts never longer than 24 hours. When they arrive for continued drying and processing, they are not the same cherries as when they started their trip... and with it, now pack a profile loaded with sweetness.
