Las Trojas Producers Association is located in the cloud-forest of the Henri Pittier National Park and is home to a special community of coffee growers who produce organic, mountain-grown coffees under challenging conditions. Because this is a protected area, the harvesting and farming strategies have to be adapted: the use of chemical fertilisers or agrochemicals is strictly prohibited, which means coffee cultivation here is inherently organic - even more staggering is that all cherry harvesting and transportation is done by mule as machinery and vehicles are prohibited.
